ISOLATION AND IDENTIFICATION OF BACTERIA CONTAMINANTS ASSOCIATED WITH TIGER NUT CAKE (CYPERUS ESCULENTUS) SOLD IN MAIDUGURI, BORNO STATE.
Abstract
ABSTRACT
Tiger nut cake made from Tiger nut tubers (Cyperus esculentus) have been widely consumed in Nigeria as Dakuwa based on their nutritional values. This study is aimed at isolating and identifying the presence of bacterial contamination in Tiger nut cake from selected areas in Maiduguri, Borno state. A total of four tiger-nut cake samples were obtained randomly in duplicates from selected areas within Monday market Maiduguri, Borno state and was analyzed in the laboratory using standard microbiological methods. Susceptibility of the bacterial isolates to antibiotics was determined by disc diffusion method. The results revealed that Sample A (32.0 %) has the highest percentage of bacterial isolates followed by Samples B (28.0%), D (22.0%) and C (18.0%) respectively. Based on bacterial species Staphylococcus aureus recorded highest percentage followed by Shigella, Escherichia coli, Salmonella typhi and E. coli respectively. Based on bacterial species Staphylococcus aureus recorded highest percentage followed by Shigella, Escherichia coli, Salmonella typhiand E. coli respectively.
