Abstract

ABSTRACT This study focused on the production of glucose syrup from sweet potato using Aspergillus niger. The research was aimed at evaluating the ability of A. niger to convert starch obtained from sweet potato (Ipomoea batatas) into glucose syrup through enzymatic hydrolysis. The sweet potato tubers were washed, peeled, dried, milled, and subjected to enzymatic hydrolysis using A. niger under controlled fermentation conditions. The results showed that A. niger effectively hydrolyzed the starch into glucose, producing a clear, viscous syrup comparable in sweetness and texture to commercial glucose syrup. The physicochemical analysis revealed that the syrup had an acceptable glucose concentration and pH suitable for food applications. This study concludes that sweet potato is a viable raw material for glucose syrup production and that Aspergillus niger serves as an efficient biocatalyst. The process offers a cost-effective and environmentally friendly alternative to conventional starch sources like maize and cassava.
