Abstract

The research work was aimed at carrying out the phytochemical screening, proximate composition and elemental composition of breadfruits. The result obtained shows. 31.10:h 0.17% moisture, 6.50i 2.12% crude protein, 8.30i 0.10% crude fat, 18.601 3.07% Ash, 5.70% crude fibre and 60.80i 0.25% carbohydrate. The carbohydrate and the moisture contents in it were much higher than other parameters studied. In the course of study, Alkaloids, saponins, Tannins, Terpenoids, Anthraquinones, flavonoid, phenols, steroid and cardiac glycosides were assessed by analytical methods. The results obtained shows that Alkaloids saponins, Terpeniods, navonoid, phenols, steroid and cardiac glycosides were present while Tannins and Anthraquinones were absent. For mineral elements, the contents (mg/100g) were 6.7+ 0.10 for sodium, 526 :t 0.02 for potassium, 1.5 + 0.1 for iron, 7.60 + 0.02 for zinc, 174 + 0.01 for magnesium, 163 + 3.02 for calcium and 2.86 + 0.01 for copper. The African bread fruit is thus a rich source of Alkaloids, saponins, Terpenoids, flavonoid, phenols, steroid, cardiac glycosides and mineral elements.
