DETERMINE THE PROXIMATE ANALYSIS OF PUMPKIN SEED AND BEETROOT
Abstract
This study aims to determine the proximate composition of pumpkin seeds (Cucurbita pepo) and beetroot (Beta vulgaris) to evaluate their nutritional potential as dietary supplements. Using standard analytical methods (AOAC), the samples are analyzed for moisture content, crude protein, crude lipid (fat), crude fiber, ash, and total carbohydrates.
Preliminary research indicates that pumpkin seeds are highly nutritious, characterized by high levels of crude protein (27.48%–38.66%) and crude lipids (31.28%–45.4%), making them a significant source of energy and essential fatty acids. Conversely, beetroot (bulb) is predominantly composed of moisture (88.4%–88.7%) and carbohydrates (8.27%–9.50%), while remaining very low in fats (0.18%–0.23%). The study also examines the mineral profile, as both samples are known repositories for essential elements like potassium, magnesium, and iron. The findings of this research provide a comparative baseline for the utilization of these plant products in the food, pharmaceutical, and livestock feed industries.
