Abstract

ABSTRACT Avocado ( Persa americana) seeds are often discarded after taking the pulp of the fruit. This study is aimed at identifying the nutritional properties of flour from avocado (Persa americana) seeds. About 20 unripe avocado pear were gotten from Marian market, Calabar municipality. The seed were separated from the fruit and oven-dried then ground to powder form, the method used in this study is soxhlet extraction method using 2g of copper sulphate (CuSO4), 5g of sodium sulphide (NaSO4), 30ml of sulphuric acid (H2SO4), 2% Standard boric acid, sodium hydroxide as the solvent. The processed avocado seeds were evaluated for moisture, ash, fiber, lipid, crude, protein and carbohydrates contents. Proximate composition ( Moisture, ash, crude fibre, crude lipid, carbohydrate and protein) of the raw and fermented samples was determined using the standard methods by Association of Official Analytical Chemists (AOAC, 1990). From the result, the avocado seed flour at 50 degrees had moisture content of (14.56±0.23%) and 100 degrees had (13.45+0.07%) The ash content of the seed flour at 50 was (7.70+0.28%) while the 100 contains (5.15+0.24%). The crude protein present in the avocado seed at 50 was (8.81+0.29%) and at 100 (6.17+2.16%). Avocado seed flour at 100 contains more fibre content (20.00±1.41%) than that of 50 (20.65+0.92%), From the result gotten. The lipid content of the avocado seed flour at 50 was (3.26+0.08%) which is much than that of 100 (2.45+0.7%), showing that the seed flour at 50 contains more oil than the seed flour at 100. The carbohydrate content of avocado seed flour at 100 was (52.75+0.36%) which was higher than that of the seed flour at 50 (47.52+5.34%), gotten from the result. It was observed that avocado seed contains substantial nutrients that could meet the needs and requirements of the body, thus it is good for human and animal consumption. It can be recommended for inclusion in animal feeds formulation. It would be important to assess the toxicity in greater detail.
