Abstract

ABSTRACT This research is aimed at bacteriological analysis of exposed food (Rice & Beans and Moimoi). In this research two (2) samples were collected from the commercial area of Federal Polytechnic Damaturu which included (Rice & Beans and Moimoi) and were analysed through serial dilution, inoculation, incubation, subculture, microscopy, grams staining and biochemical tests to confirm the isolated organisms. The result of bacterial colony counts of the plates reveals higher ranged of 0.296 x 10^2 cfu/g which was recorded from Rice & Beans under 10^-2 dilution factor and the lowest is 2.5 x 10^-2 cfu/g which was recorded from Rice & Beans under 10^-4 dilution factor. The isolated organisms include: Staphylococcus aureus, Escherichia coli, Salmonella, Klebsiella and Pseudomonas aeruginosa, in which Staphylococcus aureus was confirmed from the samples through grams staining. This indicates the poor hygiene level of the food vendors as majority of the food vendors lacks western education. These vendors have to be educated and train on food hygiene to improve the safety of foods in Federal Polytechnic Damaturu.
