Abstract

| Ginger (Zingiber officinale) belongs to the family of Zingiberaceae, the used part of the plant is the rhizome. This ] sy evaluates the qualitative and quantitative phytochemical screening of ginger (Zingiber officinale) plant. Sample | was obtained from a local market in Calabar and was analyzed in the laboratory unit of biochemistry department ' ysing standand method described by AOAC. The results obtained from this study on qualitative phytochemical «reening reveals that polyphenols, flavonoids, glycosides, quinine and coumarines were highly present; terpenoids od saponin were moderately and slightly present respectively. While the result for quantitative (antinutrient) «reening shows the concentration of saponin to be high with the concentration of 29.2% , followed by oxalate and vanogenic glycosides with concentration of 7.52g/100g and 1.89mg/100g respectively. From this study it was ;o;wmdcd that ginger contain the phytonutrients polyphenols, flavonoids, quinine, glycosides and saponins which ve been used extensively for the treatment of different diseases, and the production of drugs. The antinutrient tain in ginger plant are oxalate, saponin, and cyanogenic glycosides which are also beneficial to man when taken & moderate quantity.
