Abstract
Fungi are agent of spoilage of economically important vegctables. Determination of fungal infestation in vegetables (Ugu, Oha and Spinach), investigates fungi responsible for the post harvest deterioration of Telfairia occidentalis (Ugu), Pterocarpus soyauxii (Oha), Spinacia oleoracea (Spinach) from Umungasi Market Aba, Abia State was carried out. Fungal species found associated with the deterioration of the various vegetables tested included Mucor sp, Penicillium sp. Rhizopus stolonifer. Aspergillus niger.
Aspergillus flavus. Spinach had the highest microbial fungal load of 2.9cf while Oha had the lowest fungal load of 0.6cf, the highest percentage frequency of occurrence of fungal contaminants in Ugu is Mucor sp (36.4%), Oha Penicillium s p (37.5%) and for Spinach Mucor sp (33.3%) while the lowest percentage frequency in Ugu is Aspergillus niger and Rhizopus stolonifer of 9.1% while the lower percentage frequency of occurrence in Oha iS Aspergillus flavus. Aspergillus niger and Rhizopus stolonifer of 12.5% then the lowers percentage frequency of occurrence in Spinach is Penicillium sp and Rhizopus Stolonifer of 6.6%.
