Abstract

ABSTRACT In this study, the bacterial load of Tigernut milk nuts sold at IMT, Enugu, was evaluated. Approximately ten tigernut milk samples were purchased from various campus vendors and subjected to routine microbiological analysis. The bacterial organisms linked to tigernut milk were isolated using nutrient agar and MacConkey agar. The analysis used the pour plating procedure and repeated dilution of the samples. According to the results, Escherichia coli has the lowest percentage distribution (32%), while Staphylococcus and Bacillus species have the biggest distributions, each at 34%. These bacterial species that were discovered from the tigernut milk study demonstrate that the tigernut milk that was sold on campus was extremely polluted, posing a health risk to the general population. Consequently, it is advised that tigernut milk manufacturers adhere to aseptic procedures both during and after manufacturing, all the way up to the point of product sale to end users.
