Abstract

Some dietary assessment of plantain latex with and without glycine was accomplished using AAS with view to ascertain the dietary mineral endowment of the fluid inherent to the peel or trunk of mature green plantain. Result showed that the value (ml/100g) of Na = 1023.1, K = 500.6, Se = 3.3, Mg = 230.7 and Fe = 403.7 were obtained for the plantain latex and plantain latex glycine adduct respectively. Calculated mineral ratio showed that dietary mineral inherent to plantain latex (Na/K = 2.0441) and plantain latex-glycine (Na/K=2.6153) is not associated with health risk. This study demonstrated that plantain latex with and without glycine modification possess dietary mineral that could add to dietary supplement source, hence should be sourced or recovered prior to processing of plantain peel or trunk or being lost to waste.
