RHEOLOGICAL AND CHROMATOGRAPHIC ASSAY OF PALM OIL FROM EKITI STATE
Abstract
This study investigates the rheological and chromatographic properties of oil palm sourced from various regions in Ekiti State, Nigeria, with a focus on understanding the oil’s flow behavior and time-dependent stability. Rheological analysis was conducted to assess the viscosity and shear-thinning characteristics of palm oil under varying shear rates, which are crucial for its industrial applications in food processing and pharmaceuticals. Density measurements were also performed to evaluate the impact of geographic location on oil composition, revealing variations influenced by regional environmental factors. Chronographic analysis provided insights into the oxidative stability and time-based quality degradation of the oil samples. Results indicated significant differences in rheological behavior and stability across samples, highlighting the influence of local conditions on the physicochemical properties of palm oil. This characterization contributes to optimizing the quality and usability of palm oil for diverse applications, enhancing value-added utilization and marketability.
