DEVELOPMENT OF DOUGH MIXING AND KNEADING MACHINE
Abstract
ABSTRACT
The study explores the development of an efficient dough mixing and kneading machine, focusing on improving productivity and consistency in dough quality. Manual dough mixing is labor-intensive, lacks uniformity, and often results in inconsistent dough texture. This project aims to fabricate a petrol-powered machine that addresses these issues, particularly benefiting small and medium-scale bakeries. Key goals include designing, fabricating, and testing the machine for optimal performance, highlighting its relevance in the commercial bread production process.
The machine design considers factors such as batch size, dough consistency, mixing time, and component selection to achieve effective mixing and kneading. Stainless steel was used for the components due to its durability and hygiene compliance. The machine utilizes a spiral auger and petrol engine to ensure proper dough development while providing flexibility with detachable extruders. Testing assessed the machine’s ability to handle different dough types, focusing on mixing speed, consistency, and homogeneity, with promising results.
The study concludes that the fabricated machine is a viable solution for small to medium bakeries, offering efficient, consistent dough production. However, further research on energy consumption and optimizing mixing times could enhance its efficiency. It recommends establishing standardized procedures for ingredient proportions and modifying certain design elements, like securing the mixing chamber cover, to improve safety and functionality.
