Abstract

ABSTRACT The grilled Beef (liver) samples were sampled from retail outlet in Otuoke community, Bayelsa State, Nigeria. The analysis was carried out with a Gas Chromatography (GC) – Flame Ionization Detector (FID) equipped with auto sampler packed with anhydrous Na2SO4 and silica gel was used for PAH extraction with dichloromethane as the eluting solvent.. The results of sixteen PAHs in the studied grilled suya (liver) shows appreciable amount of PAHs of low molecular weight such as acenaphthene (0.97ppm), anthracene(0.02ppm)High molecular weight PAHs such as fluoranthene(0.01ppm), pyrene(0.03ppm) and benzo (a) anthracene(0.06ppm) were also detected. Five and six membered ring PAHs benzo (k) fluoranthrene(0.13ppm), benzo (a) pyrene(0.17ppm), indenol (1, 2, 3) perylene(0.14ppm), dibenzo (a, h) anthracene(0.55ppm) and benzo (g, h, i) perylene(0.21ppm) were all detected in the roasted suya (liver). Levels of the polycyclic aromatic hydrocarbons were found in trace amounts and were below World Health Organization limits for human consumption.
