Abstract

Tartrazine, while extensively used as a synthetic dye, exerts diverse biochemical effects including oxidative stress induction. The liver plays a central role in metabolism and clearing xenobiotics (such as tartrazine) from the system using antioxidant defenses like glutathione and glutathione peroxidase system which can get depleted in the process. This research investigated the effect of aqueous extract of Zingiber officinale on hepatic glutathione (GSH) and glutathione peroxidase (GPx) of tartrazine treated rats. Ginger (Zingiber officinale) was purchased at Opa Market, Okitipupa, Ondo State. It was rinsed, peeled, sliced and extracted using cold maceration with distilled water. 36 Male Wistar Rats were divided into groups; control, tartrazine alone, Ginger alone at varying concentrations (100 mg/kg and 200 mg/kg), and combinations of tartrazine with Ginger at corresponding doses. GSH and GPx were therefore assayed to determine the effect of Ginger on hepatic glutathione and glutathione peroxidase. Result revealed a significant decrease (p
