Abstract

This study focuses on the comparative analysis of the selected mineral composition of the pileus of Pleurotus ostreatus and Pleurotus florida cultivated on sawdust.Mushrooms were grown on saw dust substrates prepared with aseptic techniques, inoculated with mycelial spawn, and monitored through critical phases of ramification, pinhead formation, and fruiting body development.Fullymatured mushrooms were harvested, processed, and analyzed for their macro-and micro-mineral contents. The findings revealed notable variations in mineral composition between the two species.Pleurotus florida demonstrated higher concentrations of zinc(2.20±0.02mg/100g) and iron(14.93±0.02mg/100g),which are vital for enzymatic activity and oxygen transport in the human body.On the other hand,Pleurotus ostreatus had elevated levels of potassium (345.02±0.01mg/100g) and phosphorus (151.16±0.01mg/100g), essential for nerve function, energy transfer, and bone health. Both species displayed stable magnesium levels (121.01±0.01to121.33±0.03mg/100g), while calcium concentrations were uniformly low (0.87±0.02to0.94±0.01mg/100g).
