Abstract

Abstract The aim of this study is to evaluate the problems associated with insanitary conditions of slaughter premises and its health implication on meat quality in Kaltungo metropolis. Various literature were reviewed with the following subheadings: problems associated with insanitary condition of slaughter premises, health implication of slaughter premises, conceptual framework, condition of slaughter premises etc. The researcher used a cross-sectional descriptive survey to investigate meat safety and hygiene standards. The research decided to use simple random sampling techniques and 100 questionnaires were distributed and returned successfully before the final administration in the study area. The research used observation, interviews, and close-ended questionnaires. The findings indicated that the problems associated with insanitary conditions of slaughter premises were lack of political/government will, negligence, and ignorance. It was found that the implications of meat-borne disease among food/meat handlers are insanitary conditions of slaughter premises, Anthrax infection, and also meat death. Furthermore, the findings of this study indicated that sterilization of slaughter premises utensils, personal hygiene of meat/food handlers, and inspection of meat can prevent the spread of meat-borne disease.
