Abstract

ABSTRACT This study was designed to characterize the nutritional and anti-nutrional composition of the Guine corn Cake (Hoche) a common food in the northern Nigeria. Nutritional and Anti-nutrional compositions were carried out using standard procedure outlined by Association of Official Analytical Chemists (A.O.A.C). The result of the proximate analyses also showed that the plant has a high nutrient concentration in carbohydrate. The highest concentrated Parameter was Carbohydrate with the concentration of 67.70%, the moisture with concentration of 13.80%, then crude fat with concentration of 8.30%, crude fibre with concentration of 4.20%, crude protein with concentration of 4.20% and the lowest parameter was Ash with concentration of 1.80%. From the Table 2 the Tannin ranged from (269.00mg/100g) and with standard deviation of (1.094). ) had higher concentrations. generally, the concentration of anti-nutrient where higher in the sample therefore caution must be taken before taken the food.
