Abstract

This study evaluated the effects of quercetin on inflammatory cytokines and kidney histomorphology in monosodium glutamate (MSG)-fed rats. Sixty Wistar rats were divided into control and experimental groups, with varying doses of quercetin and MSG administered over 35 days. Results showed significant alterations in body weight, food intake, cytokine levels (IL-1β and IL-6), and kidney tissue structure. Quercetin supplementation improved biochemical parameters and mitigated kidney damage induced by MSG. The findings suggest that quercetin possesses protective effects against MSG-induced renal toxicity, although further studies are required for clinical application.
