Abstract

The study investigated the presence of aspartame (E951) in locally produced bread from Azare, Bauchi State, using HPLC analysis. All three bread samples tested contained measurable amounts of aspartame, but the levels were well within the World Health Organization’s safe daily intake limits. This indicates that consuming these breads does not pose an immediate health risk. However, the study highlights the need for better regulation, proper labeling, and increased public awareness—especially for people with conditions like phenylketonuria (PKU)—and recommends ongoing monitoring of food additives in Nigeria..
