ORGANOLEPTIC PROPERTIES OF WEST AFRICAN DWARF GOATS FED CASSAVA PEEL-BASED DIET SUPPLEMENTED WITH SHIVAN AND SANDPAPER LEAVES
Abstract
This study evaluates the organoleptic properties of West African Dwarf goats fed a cassava peel-based diet supplemented with shivan and sandpaper leaves. The research aims to determine the effect of these alternative feed resources on meat quality attributes such as taste, tenderness, aroma, and overall acceptability. Experimental feeding trials were conducted, followed by sensory evaluation using a panel of assessors. The results indicate that incorporating these locally available feed materials does not adversely affect meat quality and may improve certain sensory attributes. The study highlights the potential of using cost-effective and sustainable feed alternatives in goat production
