THE STUDY OF NUTRITIVE, ANTIOXIDANT AND PHOTOCHEMICAL PROPERTIES OF CASSAVA ( MANIHOT ESCULENTA) LEAVES
Abstract
This study investigates the nutritive, antioxidant, and phytochemical properties of cassava leaves, focusing on their potential health benefits. Nutrient analysis revealed high levels of essential minerals, including iron (310.24 ppm), potassium (465.23 ppm), and calcium (423.27 ppm), alongside moderate protein (4.38%) and fiber (3.73%). Vitamin analysis showed a high concentration of vitamin C (34.92 mg/g). Antioxidant assays demonstrated significant DPPH radical scavenging activity (53.64%) and hydroxyl radical scavenging (66.22%), suggesting considerable antioxidant capacity. Despite the presence of anti-nutrients like phytic acid and oxalates, the findings suggest cassava leaves are a nutritionally dense food source suitable for a balanced diet.
