Abstract

ABSTRACT Street foods serve as a popular and affordable source of nutrition; however, they can pose significant health risks due to the presence of foodborne pathogens. This research examines the prevalence of Aspergillus spp. and Staphylococcus aureus in roasted meat sold by street vendors in Gadau, Bauchi State, Nigeria. The objective of the study is to assess the microbial safety and health implications associated with these street-vended foods. Four samples of roasted meat were collected from different vendors, and microbiological analyses were performed using Mannitol Salt Agar for the isolation of Staphylococcus aureus and Potato Dextrose Agar for Aspergillus spp. Isolation was substantiated through biochemical and morphological techniques. The analysis revealed alarming contamination levels; with 75% of samples testing positive for Staphylococcus aureus and 50% for Aspergillus spp. The data suggest that poor hygiene practices during post-processing and environmental exposure are substantial contributors to microbial contamination. This study recommends the enforcement of stringent hygiene regulations among street food vendors, systematic microbial screening, and increased public awareness campaigns to mitigate the risk of foodborne infections. Implementing proper food handling practices and local food safety regulations is crucial for improving the health standards associated with street-vended foods in Gadau. This research serves to enhance consumer safety and foster regulatory measures in street food preparation
