IN VITRO SCREENING OF RED VELVET SOLUTION FOR ANTIOXIDANT CAPACITY AND SECONDARY METABOLITES
Abstract
This project explore the antioxidant capacity and secondary metabolites of synthetic red velvet
colourant solution. Through the assays such a DPPH test, lipid peroxidation, Total flavonoid
content test, the study assesses the colourant ability to neutralize free radicals, revealing notable
antioxidant properties was carried out. Additionally the study also identified secondary
metabolites that contribute to the choice of red velvet in consumption, Secondary metabolites
were phenol, tannin, saponin, cardiac glycosides, triterpenoids, alkaloids and flavonoid were not
present in the solution of red velvet.
The red velvet colourant give limited antioxidant, the result obtained throuh the assays such as
DPPH, of different concentrations, 100µl, 200µl, 300µl, 400µl, 500µl, 600µl and700µl with
percentage results of-138.5,-159.9,-163.9,-159.5,-165.4,-140.6,-166.5, respectively, Lipid
peroxidation inhibition of different concentrations, of 50µl, to 450µl with percentage results
0.007,0.005,0.005,0.004,0.004,0.003,0.003,0.003, respectively, Hydroxyl free radical inhibition
power of red velvet solution of different concentrations, 50µl, 100µl, 150µl, 200µl, 250µl, 300µl,
350µl, 400µl, 450µl with percentage results 73.97,61.76,47.65, 30.23,25.23,-12.01,-8.61,-12.51,
23.82 respectively. The finding showed that the lower the concentrations of the synthetic red
velvet colourant exhibit better antixdant power. The overall levels of secondary metabolites are
low, their potential efficacy may enhanced at reduced concentration. For DPPH assay the
colourant do not exibit scavenging power, and Hydroxyl free radical inhibition power the
colourant inhibit from the lower concentration which is 50µl,to 250µl, from 300µl, to450µl, it
does not inhibit free radical
