Abstract

The study investigates fungi associated with the spoilage of Irish potato (Solanum tuberosum L.), one of the most consumed tuber crops globally. Irish potatoes are prone to fungal contamination, leading to significant post-harvest losses and reduced food quality. This research aimed to isolate and identify the fungal species responsible for spoilage and assess their prevalence in different storage conditions. Samples of spoiled potatoes were collected from various markets and analyzed in the laboratory using standard microbiological techniques. The results revealed the presence of single fungal species Fusarium oxysporum, which were the most common spoilage agents. The findings provide insights into the need for improved storage practices to reduce fungal contamination and ensure food security.
