COMPARARTIVE QUANTIFICATION OF CITRIC ACID CONCENTRATION IN LEMON JUICE OBTAINED FROM FOUR DIIFERENT COMMUNITIES IN YALA LOCALGOVERNMNET AREA
Abstract
This study aimed to quantify citric acid concentrations in lemon juice samples from four different geographical locations usingtitrimetric analysis.Juice samples obtained from the four locations were assigned unique group codes for proper identification: Group A (Okpoma), Group B (Okuku), Group C (Ugaga), and Group D (Yahe). For each group, juice samples were prepared intriplicate (n = 3) and analyzed for percentage juice yield and citric acid concentration in lime fruit under controlled room temperature conditions.Significant variations were observed in both juice yield and citric acid content among the different lemon groups. Juice yields ranged from 14.8% to 24.6%, with Group B (Okuku) demonstrating the highest yield (24.2% g/g and 24.6% g/mL) and Group D (Yahe) the lowest (14.8% g/g and 15.4% g/mL). Citric acid concentrations varied from 0.6001 to 1.1999 g/100g, with Group A (Okpoma) exhibiting the highest concentration (1.1999 g/100g) and Group D (Yahe) the lowest (0.6001 g/100g). Group C (Ugaga) showed intermediate values with 22.7% juice yield and 1.0108 g/100g citric acid concentration. These findings suggest that Lemon juice from different locations within Yala LGA varies in citric concentrations, probably due to geographical variations. The data provides information for the consumers and commercial purposes.
