Abstract

A total of three (3) samples of spoiled Irish potato (Solanum tuberosum) tubers were obtained from four different vendors and fungal isolation was carried out. Funig isolation was done to determine the fungi associated with the spoilage of Irish potato (Solanum tuberosum). Five fungal species were isolated and identified as the spoilage fungi. These Organisms are Aspergillus niger(39.13%), Aspergillus flavus(4.35%), Fusarium solani(26.09%), Penicillium crustosum(17.39%), and Mucor(8.69%). Good sanitary, storage and handling measures should be practiced to limit the extent fungal infestation.
