Abstract

ABSTRACT Estimation of the essential minerals compositions of an italicized citrullus vulgaries (water melon) fruits pulp was carried out using standard analytical procedure. The result shows that sodium (Na,), potassium (Ic), magnesium (Mg) and calcium (Ca) have values of 1.7, 114.7, 10.2 and 6.8 (all Mg/100g) respectively. This means that water melon is rich source of potassium and at the same time is not poor in other minerals. The high potassium content makes it a healthy fruits for the hypertensive patients.
