APPLICATION OF STATISTICAL QUALITY CONTROL TECHNIQUE IN IMPROVING PRODUCTION PROCESS OF ALFIJIR BREAD COMPANY
Abstract
ABSTRACT
ControllingandimprovingQuality hasbecomeanimportantbusinessstrategy formany organizations, becauseabusinessthatcandelightcustomersby improvingandcontrolling quality candominateitscompetitors.Hence, thisprojectworkfocusedontheapplicationof statisticalquality controltechniquetoAlfijir Bread Company, inorderto controlandimprovethequalityoftheirproductssoastoremaininthecompetitivemarket. Toachievetheaimandobjectivesofthisprojectwork, quality control datawerecollected throughtheprimary source(i.e.directlyfromtheQuality ControlDepartmentofthe company). Thereafter, therespectivestatistical parameterssuch as theMeans, Ranges, StandardDeviations,CentreLineControl Limit,(CL),UpperControlLimit(UCL)and LowerControlLimit(LCL)weredevelopedandanalyzedforthecompany using statistical approach.TheresultingControlChartswasalsoconstructedusing the parameters developed forbetter understanding and visibility. The primary objective is to evaluate the process stability and capability using control charts and process capability analysis. Control charts for the range and mean were constructed to monitor process variation and centering, while process capability indices (Cp and Cpk) were calculated to assess the ability of the process to consistently meet specifications. The results indicate that the process is statistically stable, with all data points for both range and mean falling within their respective control limits. However, the process capability analysis revealed that the variation is slightly larger than desired (Cp = 0.865), and the process is not fully centered within the specification limits (Cpk = 0.433), with a tendency toward producing products closer to the lower specification limit. Based on these findings, recommendations are made to reduce process variation, center the process, and implement continuous improvement initiatives. These actions are expected to enhance the production process and ensure that products consistently meet quality standards.
