Abstract

The proximate composition of two different coconut (Nigeria coconut and Ghana coconut) endocarp samples was investigated. Sample A was Ghana coconut and Sample B was Nigeria coconut. Coconut (Cocos nucifera) endocarp was observed to have high percentage of lipid (7.459% in sample A while 6.56% for sample B) than other nutritional contents analyzed in the proximate composition. Moisture content was (32.022% in sample A and 43.578% for sample B), fibre (2.042% for sample A and 1.898% for sample B), carbohydrate (37.376% for sample A and 33.495), protein (8.47% for sample A and 8.02% for sample B) and ash (12.631 for sample A and 6.448% for sample B). The proximate composition of coconut endocarp was investigated. The result aims at elucidating the proximate composition studied so far with regards environmental variations as no work of such has been done in the study area or environment.
